Mushroom Blondies

Ingredients

  • 170g butter melted and cooled
  • 350g light brown sugar
  • 2 large eggs
  • 2 tbsp vanilla bean paste
  • 3-5 teaspoons 8 mushroom blend (depending on how strong you wish to have the flavour)
  • 250g all-purpose flour
  • 1 teaspoon baking powder
  • 1 pinch Maldon sea salt
  • 90g chopped dates
  • 90g pecans (replace with choc chips)

Directions

Preheat the oven to 180 degrees and line a 9 x 13 baking tin.

Melt the butter and leave to completely cool.

Mix the butter and sugar until smooth.

Add the vanilla, eggs and mushroom powder to the sugar and butter mix, stir until incorporated.

Next, mix in the flour, baking powder, sea salt and stir until thoroughly combined.

Fold in your chopped dates and pecans.

Pour into your baking tin and bake in the centre of the oven for 30-35 minutes, or until a knife comes out clean.

Leave to cool completely then remove from the tin.

Store in an airtight container and enjoy!
